What is the difference between the two middle buttons in this image? When I get the context window, the left button says "Shade/Shade all view ports" and the right button says "shaded viewport/wireframe view port". I've noticed that the one on the left has command line options (such as turning off the wireframe) but as soon as I click on the stage or press enter, the command disappears along with the view.

Hi Diana!
Excellent question, I also wondered that myself. The left button (Shade/Shade All View Ports ) is supposedly a quicker way to shade a certain viewport (or all viewports) using a predetermined setting. If you click it you can set some options from the command prompt, like for example:
DisplayMode=Ghosted DrawCurves=Yes DrawWires=No DrawGrid=Yes DrawAxes=No
Let's say the above settings is a display mode you prefer. So you set it ones and Rhino will remember these settings, so next time you're in a viewport and you want it to be shaded according to those settings you just used, you just Click on the Shade button and hit Enter and the viewport will be shaded accordingly without having to do a lot of other clicks to get it done.
Ok, now the right button (shaded viewport/wireframe view port), will just use the "Shaded" Display mode for the active view port. As you know there are various display modes, Shaded, WireFrame, Ghosted etc. If you open the small drop down menu, you can find most of them there.
I hope this is clear. I get the confusion because the display icons are the same, but I believe they should be different.
Anyway good luck!
Arie
